1. Soup pasta with red king crab and broccoli

Winter is the best season for red king crab and broccoli, because those tastes are becoming sweet!
By using X’mas colors, red: red king crab, green: broccoli, white: conchiglie (seashells) and cream soup, let’s make delicious X’mas pasta for your party guest!

Red king crab contains Astaxantin, that unlike some carotenoids, is not converted to vitamin A (retinol) in the human body. Too much vitamin A is toxic for a human, but astaxanthin has lower toxicity. It is an antioxidant with a slightly lower antioxidant activity than other carotenoids.

Currently, the primary use for humans is as a food supplement. Research shows that due to astaxanthin's potent antioxidant activity, it may be beneficial in cardiovascular, immune, inflammatory and neurodegenerative diseases.
Some research has suggested potential as an anti-cancer agent.Research supports the assumption that it protects body tissues from oxidative damage.


2.Guacamole with shrimp

Guacamole is an avocado-based dip which originated in Mexico. It is traditionally made by mashing ripe avocados with a molcajete (pestle and mortar) with salt. Some recipes call for tomato, onion, garlic, lime juice or lemon juice, and/or seasonings.

We use rind of avocados for vessel, and for constrasting woth green colors of avocado, we add red pepper, red dried tomato, and for adding sweet sents, put coriander.
This objet d’art is good for hors d’oeuver of X’mas party!

High avocado intake has been shown to have a beneficial effect on blood serum cholesterol levels. Specifically, after a seven-day diet rich in avocados, hypercholesterolemia patients showed a 17% decrease in total serum cholesterol levels. These subjects also showed a 22% decrease in both LDL (harmful cholesterol) and triglyceride levels and 11% increase in HDL (helpful cholesterol) levels. Additionally a Japanese team synthesised the four chiral components and identified (2R, 4R)-16-heptadecene-1, 2, 4-triol as the natural antibacterial component.


3. Lasagna with root crops

In this recipe, there are many kinds of root crops, and root crops act warming your body.
And this recipe is fewer calories than original Lasagna recipe, because of using Tofu and White Miso paste instead of White cream.
You can enjoy this recipe as standard recipe in winter season. And this Lasagna goes well with Red wine !

On an icy day, we are eager for grilled dishes!
At this month, we introduce you simple recipes that using seasonal ingredients, 3kinds of grilled dishes.

1. Baked carrots with nuts sauce

If you encounter with sale of carrots, let’s engross all of them!
Fresh and thickish carrots become tender,juicy and sweet after grilled!

Nuts sauce, that made of peanuts, cashew nuts, walnuts and barley miso, is also good for dip of stick saladas.

The carrot gets its characteristic and bright orange colour from β-carotene, which is metabolised into vitamin A in humans when bile salts are present in the intestines.

Carrots are also rich in dietary fibre, antioxidants, and minerals. Lack of Vitamin A can cause poor vision, including night vision, and vision can be restored by adding Vitamin A back into the diet. An urban legend says eating large amounts of carrots will allow one to see in the dark.

2.Carrot rice cake

Combination of oyster and rocket is a rich food. A lots of ingredients, fewer paste, we make healthy Jeon!

Jeon refer to many pancake-like dishes in Korean cuisine. Jeon is made with various ingredients such as sliced meats, poultry, seafood, and vegetables depending on the style and mixed with flour batter or coated with egg batter and then pan-fried with oil.

Oysters, especially 'wild', are excellent sources of several minerals, including iron, zinc and selenium, which are often low in the modern diet. They are also an excellent source of Vitamin B12. Oysters are considered the healthiest when eaten raw on the half shell.

At this month, we introduce you 2 recipes of Japanese style, and good for Halloween party’s menu!

1. Pumpkin balls of tea napkin bag style

We make pumpkin balls, inside is simmered minced chicken of seasoning with honey, ginger, and soy sauce. Tastes of these pumpkin balls are similar to pumpkin croquettes, but these pumpkin balls are not fries, so these calories are fewer.
Pumpkin ball suits with hors d’oeuvre for Halloween party, and goes well with dry white wine!
Pumpkin is rich in VE andβ-carotene, which is Anti-oxidizer, is prevention for arteriosclerosis.
Also β-carotene is in cooperation with VE, prevents from getting cancer, and catching a chill.
This recipe is cooked with microwave oven, so it will be good for beginners!

2.Spaghetti with Japanese mushroom soup

At this month, we introduce you low calories and healthy recipe for healing your heat exhaustion.

1. Fresh roll (served with miso dressing)

A fresh roll is a Vietnamese dish consisting of pork, shrimp, herbs, bún (rice vermicelli), and other ingredients wrapped in rice paper.
This fresh roll is rather JAPANESE style, because we use green perilla for herbs, and bean-starch vermicelli for bún.
Also we serve with a miso dressing which is mixed with rice vinegar and white miso.

One of ingredient, shrimp is diet food, as high in protein, low-fat, and low-calories.
Also shrimp contains Taurine, which may exert a beneficial effect in preventing diabetes-associated microangiopathy and tubulointerstitial injury in diabetic nephropathy. Taurine acts as a glycation inhibitor also.

And shrimp contains calcium and potassium.


2.Gumbo soup

Gumbo is a stew or soup originating in south Louisiana which is popular across the Gulf Coast of the United States and into the U.S. South. It consists primarily of a strong stock, meat or shellfish, a thickener, and the vegetable "holy trinity" of celery, bell peppers, and onion. Traditionally, one of the key ingredients has been okra, the African plant okingumbo, from which the dish originally took its name.

Okra ( known in many English-speaking countries as lady's fingers or gumbo) is a flowering plant in the mallow family. It is valued for its edible green seed pods. Originating in Africa, the plant is cultivated in tropical, subtropical and warm temperate regions around the world. It became a popular vegetable in Japanese cuisine toward the end of the 20th century, served with soy sauce and katsuobushi, or as tempura.

One of food stuff of okura is β-carotene, which is Anti-oxidizer, is prevention for arteriosclerosis.

This Gumbo soup is good for healing your summer lethargy!

1. Italian Octopus rice

We arrange Japanese Octopus rice for local dish of South Italy, which is a stew of Octopus and Tomatoes, and serve with couscous.
Octopus contains a lot of Taurine, which is one kind of amino-acid, and has a function of anti-oxidation. Taurine also have the action of controlling blood pressure, and decline of blood sugar and cholesterol level.
Couscous bulge with hot water, so you can feel of fullness with a little amount. It is good for diet!

Everyone loves Sweet and Sour, and Hot dishes, that fit the weather in early summer !
These 2 recipes go well with beer very much!

1.Pad Thai

Pad Thai ( the dry, light version) found in the streets of Thailand.
Ingredients of Pad Thai are rice noodles, a lot of bean sprouts and shrimp, so it becomes a hearty dish, but very healthy!

One of ingredient, shrimp is diet food, as high in protein, low-fat, and low-calories.

Green papaya appears on the super market nowadays. Especially it is popular food at OKINAWA in JAPAN and Southeast Asia.

And “Som tam” ; called in Thailand combines the four main tastes of Thai cuisine: sour lime, hot chili, salty fish sauce, and sweetness added by palm sugar.

Green papaya fruit and the tree's latex are both rich in an enzyme called papain, a protease which is useful in tenderizing meat and other proteins

Also, green papaya contains a lot of Vitamin C which hardly resolve by heating than the other one. And Green papaya rich in β-carotene, citric acid, apple acid, and dietary fiber.

1. Steamed spring clams

Spring is the best season for clams; especially surf clam is becoming big
among spring clams.
We use big shells for dishes. And all ingredients (scallop, ginger, green onion, minced pork) which mixing vigorously put on these shells, and then steam them in a steamer.
Regarded as a fortunate welcoming dish with clam in Japan, especially at spring party!
Surf clams contain a lot of iron for preventing anemia, and also are rich in taurine
for preventing high blood pressure. Taurine is good for improvement of liver
disease and arteriosclerosis. So it would like to say that clams are suitable ingredients for Anti-Metabolic Syndrome Recipe!

2.Egg spring roll

This month, we introduce you simple recipes, but look like very gorgeous dishes, suitable for White-day’s recipe!

1. Minted pea soup with beacon

Fresh green peas which come in spring are getting very sweet and these colors are vivid green!
And fresh smell of mint makes to feel you are in the springtime!

Season of green peas are rich protein, carbohydrates, Vitamin B1, Vitamin B2,
and Vitamin C.

2. Spaghetti with spring shellfishes and Japanese parsley

Japanese cockle and mussels make this spaghetti a hearty.
Also the smell of Japanese parsley and vivid color of its remind you the vernal sunshine!

Season of Japanese cockle is from December to March.
Nutrients are rich Vitamin B2, Calcium, and Irons. And Japanese cockle is low-fat than fishes.

And season of Japanese parsley is from November to March.
It is one of the ingredients of the symbolic dish consumed in the Japanese spring-time festival, Nanakusa-no-sekku.

As we provide each of session at SUITENGUU-MAE( TOKYO METRO HANZOMON LINE) normally, but from this month, we can provide you the delivery lessons for your home kitchen if you have more than 2 attendance of same session.
Please enjoy your special home lesson!(Only for the first attendance, we do not ask for transportation expenses, just ask for session’s fee.)
