Although Tokyo is a season which is surprised by heavy snow, the new year comes in the twinkling of an eye, and is it fine and are you passing it the day before yesterday?

Now -- since I introduce each time the short course recipe which suited at the season that it should help coloring your great season by C's Cooking this year also !
Thank you for your consideration !

If this time comes every year, various Valentine sweets will begin to debut at the shop front of a department store.
Is how to pass your St Valentine's Day this year already decided on?

As for the Valentine sweets of this C's Cooking, making sweets is an easy recipe with which Ho, beginners, also tends to challenge.

And I introduce a recipe out of which the comment of surprise by from the given peoples "You did not buy this and it is handmade of you ?"--appearance carries out !

1.Cheese Cake with Chocolate Chip

This Cheese cake is perfect for that person of an adult who is poor at a sweet thing!
Also this cake has the effective scent of Cointreau, which is so gorgeous!
How about directing grown-up you in Valentine’s day this year?

2.Orange peel and Walnut brownie

Since 50% cacao and milk chocolate are being used for this brownie, sweetness is moderate.
If the astringent taste of the skin of a walnut and the freshness of an orange peel are added and the scent of Cointreau is attached, it will just be completion of the brownie for an adult.

3.Two sorts of ganache (Prune/Apricot)
The combination of dried fruit and a chocolate is delicacy which is effective also as for alcohol although it can make easily, and becomes Infatuation!

4. Salt Nuts Chocolate Caramel

This is the Year of the Rabbit in Chinese astrology.

And "Unohana"is 「卯の花」for Chinese characters.

U:卯→Rabbit

hana:花→Flower

So at this year's Saint Valentine's Day, we aim to be "Unohana" with OKARA SWEETS!

1. Gateau au chocolate with Okara

Okara or soy pulp is a white or yellowish pulp consisting of insoluble parts of the soybean which remain in the filter sack when pureed soybeans are filtered in the production of soy milk. It is part of the traditional cuisines of Japan, Korea, and China, and since the 20th century has also been used in the vegetarian cuisines of Western nations.

This Gateau au chocolate is without flour and chocolate, with Okara and cocoa powder, becoming moist taste.
You have better to bake this cake 1day before Saint Valentine’s Day, because this cake becoming deliciously, by putting 1day after baking.

2.Truffe of Okara

We make 3 different colors of Truffe of Okara, and these taste of 3 Truffes are as follows;
(At this course, you can choose 2kinds of tastes among 3kinds of tastes as below.)

First of all, we make paste of Okara, which is made from Okara, milk, skim milk, and cornstarch.
And adding each flavour, cinnamon for White, rum raisin for Black, and cherry+kirschwasser for Pink, and make it ball, and finally coating with each chocolate.

Hearty Okara Truffes are finished with low calorie sweets,which are 50kcal apiece and under.

So it is be a good present for your darling who is on a diet!

3.Japanese Ganache

We make 5kinds of Japanese Ganache this year, adding apricot which has received attention as healthy raw material(for recovery of fatigue ).
At this course, you can choose 2kinds of topping among 5kinds of topping as above.

4.Black sesame Ganache

We make 2 kinds of Black sesame Ganache, adding with black sesame paste for dark chocolate.

*Spinach:Spinach powder is vivid green color and has sweetness of Spinach. It is good for Vegetarian!

*White Sesame: Inside of Ganache, it contains black sesame paste, and out side of Ganache is White Sesame, so this Ganache is good for who is poor at sweets, and lovers of sesame!

4. Adult Ganache

Top of Coffee Ganache contains dark rum, and decorate with sweet mimosa!
Rich coffee flavor is representative sweets of adult sweets.

The yuzu's flavor is tart, closely resembling that of the grapefruit, with overtones of Mandarin orange. It is rarely eaten as a fruit, though in the Japanese cuisine its aromatic zest (outer rind) is used to garnish some dishes, and its juice is commonly used as a seasoning, somewhat like the way the lemon is used in other cuisines.

So this YUZU Ganache’s taste is very fresh, and goes well Japanese green tea, coffee, and well-chilled white wine!

At this month, we introduce you 4kinds of X'mas cakes, that are simple, healthy, and delicious recipes.
You can have to surprise your guest of your X’mas party with these lovely cakes!

1. Shortcake with Okara (soy pulp) and strawberry

3.Bitter buche de Noel

Bûche de Noël is a traditional dessert served during the Christmas holidays in France, Belgium, Quebec, Lebanon and several other Christian-populated francophone countries as well as in the UK. As the name indicates, the cake is generally prepared, presented, and garnished so as to look like a log ready for the fire.
The traditional bûche is made from a Génoise or other sponge cake, generally baked in a large, shallow Swiss roll pan, frosted, rolled to form a cylinder, and frosted again on the outside. The most common combination is a basic yellow sponge cake, frosted and filled with chocolate buttercream; however, at this time we use greentea sponge cakes, frosted and filled with bitter chocolate butter cream. So this Bûche de Noël becomes bitter taste than trade edition!

As autumn deepens into winter, we have low humidity and temperature.

So November is the best season for baking cakes!

At this month, we introduce you 3kinds of cakes, that are simple, healthy, and delicious recipes.

You can have to surprise your guest of Beaujolais Nouveau wine party with these lovely cakes!

1. Banana, walnut, and Kinako (soybean flour)cake

Kinako is a product commonly used in Japanese cuisine.
Kinako is produced by finely grinding roasted soybeans into powder.Kinako, being composed of soybeans, is a healthy topping and flavoring which contains B vitamins and protein.

Harmonize of good smells, sweet banana’s aroma with crispy walnut’s aroma is goes well coffee or tea or green tea!

If you are on a diet, do not worry about it! This cake is fewer calories than commercial production.

2. Blueberries scones

In the United States, scones are drier, larger and typically sweet. Those sold by coffee shops often include fillings such as cranberries or blueberries.
But this time, we intruduce you this healthy scones, not so sweet, and with jucy taste of blueberries.

Blueberries contain anthocyanins, other antioxidant pigments and various phytochemicals possibly having a role in reducing risks of some diseases, including inflammation and certain cancers.

Researchers have shown that blueberry anthocyanins, proanthocyanidins, resveratrol, flavonols, and tannins inhibit mechanisms of cancer cell development and inflammation in vitro. Similar to red grape, some blueberry species contain in their skins significant levels of resveratrol, a phytochemical.

3.Sweet potatoes and apple Tarte Tatin

Tarte Tatin is an upside-down apple tart in which the apples are caramelized in butter and sugar before the tart is baked.
This sweet potatoes and apple Tarte Tatin is hearty volume, but very simple receipe by using with freezing pie paste.

Sweet potatoes are rich in complex carbohydrates, dietary fiber, beta carotene (a vitamin A equivalent nutrient), vitamin C, and vitamin B6. Pink and yellow varieties are high in carotene, the precursor of vitamin A.

At this year HALLOWWEEN PARTY, let’s make homemade pumpkin sweets, and win him/her heart!

1. Pumpkin Mont-blanc

On the first of picture, pumpkin puree with cream cheese is squeezed on small tart.
And the second of picture is topping with cinnamon powder of the first one.
By using baked small tart of commercial one, this recipe becomes very simple, and good for beginners!
This recipe is so plain, but this taste is very rich with pumpkin puree, and cream cheese.
At autumn tea party, this pumpkin Mon-blanc goes well with aromatic earl grey tea!

2. Pumpkin purin pudding

Purin is a Japanese name of Crème caramel.
But this pumpkin purin pudding is rather Western confectionery than Japanese confectionery, because of rich taste with pumpkin puree, cinnamon powder,and fresh cream.
Bittersweet caramel sauce show off this pumpkin purin pudding for rich taste, and topping with whip cream and the skin of pumpkin make it gorgeous looks!

TOKYO is still hitting the hottest summer after the Second World War!!
At this month, we introduce you Japanese style healthy sweets that remind you the cool wind in early autumn!

1.Green tea custard pudding

You can enjoy that melting taste of this green tea custard pudding in your mouth!!
Also you can heal your heat exhaustion by its bittersweet taste!
By one bite of this green tea custard pudding, you can feel a chilly wind in early autumn!

2. Cassis yokan

Yōkan is a thick jellied dessert made of red bean paste, agar, and sugar. It is usually sold in a block form, and eaten in slices. There are two main types: neri yōkan and mizu yōkan. "Mizu" means "water", and indicates that it is made with more water than usual. Mizu yōkan is often chilled and eaten in summer.

Although most yōkan found in Japan and abroad are typically made with red bean paste, yōkan made from white kidney bean paste (shiro an) are also relatively common. This type of yōkan is milky and translucent with a much milder flavour than that made of red bean paste.

This Cassis yokan is a Mizu yōkan, and made from white kidny bean paste.
Also it is flavoured as sweet-and-sour taste, and colourde as beautiful Bordeaux color, so you can invite the mistake as jewelry!
And this Cassis yokan is off its sugar amount, so it is suitable for who is dieting.

3.Tropical mousse of mango and soy milk

All ingredients mix by blender, and add gelatin, and it will be ready!
This recepi suit for beginners!

At this month we introduce you 2 kinds of sweets that using seasonal tomatoes and citron roll.

1.Tomato cheese mousse

Sweetness and sourness of tomato coupled with rich taste of cheese, it is just like the summer taste!
To make this mousse as healthy sweets, we transpose half of cream cheese with yoghurt,
So it become half of calories cheese mousse than trade version
Also you can serve to freeze this like ice cream in hot summer days!

2.Tomato pound cake

By using dried tomato of fruit tomato, and olive oil which is substitution of butter, this pound cake become having a more sweet and moist taste, also effect of anti-ageing and being moist skin.
And this pound cake ideal for breakfast, as by adding tomato puree for dough, which is intended to produce a more moist cake, being easy to swallow.

3.Citron roll

At mid summer tea times, this sweet and refreshing citron roll makes speeding up your rate of works!
Sweet and sour taste of citron roll save your weariness from the summer heat!
For the top of roll, pour on lots of icing and green orange peel, and it become dramatic interpretation of cool summer tea time!

This month, we introduce you healthy and low-calories sweets, especially using green soybeans which is summer seasonal vegetable, is of much note!

1. Bouchee with green soybeans cream

“Bouchee ”is French word, that meaning of “ a nibble” and original “Bouchee ”is a nibble of warm hors d’oeuvre.
But this Bouchee is for summer sweets, that with salty-sweet green soybeans cream and server it chilled.
This Bouchee is made of puff pastry of rice flour and low-fat fresh cream, so it is finished off fairly low-calories than trade version.
We strongly recommend that serve it with ice-cold white champagne!

2.Mousse of green soybeans

This recipe is reproduction version of Bavarian cream of green soybeans, which was favorable review last summer.
Take the chill off the milk, and add it into beated yolk with handy blender, make fluffy foam for good taste!
This mousse goes well ice-cold white champagne or stout!

3. Muffin with fig and yoghurt

By reconstitute dried fig with rum, and add yoghurt instead of butter, this muffin become having rich aroma but low-calories.
