This month, we introduce you healthy vegetable sweets, which are suitable for the present of Mother’s day, or cute sweets of spring picnic!

1. Spinach and sesame paste cookie

By adding spinach puree, which is lasting vivid green after baking. Also sesame paste adds savory smell to this cute green flower cookie!
This pretty cookie will refresh you after daily hard work, and go well with a cup of Darjeeling tea!

2. Soybean flour Swiss roll cake with green soybean cream

This is the second version of Spring Swiss roll cake!
At this time, we make brown paste with soybean flour, and wrap green soybeans cream with it. And this paste gain savory smell after baking, also goes well with green soybeans cream!
By using rapeseed oil instead of butter, this Swiss roll cake becomes fewer calories, so it will be good healthy present of Mother’s day!

3. Sesame Éclair with ginger cream

We make this Éclair rather small than on the market one, for easy to have a nibble of it.
And this ginger cream is nicely hot and sweet taste by syrupy ginger.
This Éclair goes well with ice-cold white champagne or sweet rose!

4. Spinach castella

Spinach powder makes this castella special one by its green color and sweetness of spinach.
You had not better to taste this castella when baking on the same day, but better to taste after 2days, because it will become moist taste.
These healthy Japanese sweets go well with coffee, also green tea.

April is the beginning season for going on a picnic.
At this mouth, we introduce you healthy homemade sweets, which go well
green-tea, champagne and white wine, and also these sweets are low-calorie.

1.Green tea powder pound cake, spring Japanese style( Sakura and Azuki sweet bean paste)

This Japanese style pound cake, using with white bean sweet paste for
moist taste, but also using with shortening for calorie-cut and crisp taste.
Inside of pound cake, putting Sakura or Azuki sweet bean paste on dough, for picking out bitter taste of powder green tea.
So the double different tastes of this pound cake (moist & crisp, sweet & bitter)
go well coffee and strong green-tea!

2.Spinach swiss roll cake

A bunch of spinach transforms itself into a vivid green swiss roll cake!!
Whip cream with sesame paste is not so sweet, but it is so savory by sesame flavor.
As this swiss roll cake made from the whole bunch of spinach, is rich in iron, so it is recommendatory sweet for preventing anemia,especially for woman.
And also it is good sweet for children who dislike spinach.

3.Apple pound cake

First, simmer apple with squeeze of lemon, cinnamon, and millet sugar. And then,
by adding this whole apple broth, this pound cake become very moist taste.
Apples contain a lot of potassium, which effectives in improvement of
high blood pressure.
And also, apples contain a lot of pectin, which has power for anti-oxidation,
and its power become nine times by heating.
It will be good serving way from now onward that chills this pound cake like pudding.
This pound cake goes well with slightly chilled champagne!

At this month we can introduce you homemade healthy sweets, which go well wine, tea and coffee. Let’s enjoy these sweets that are mild sweet, as White day’s & A cherry blossom-viewing picnic sweets!

1.Ginger cookies

These ginger cookies made with oatmeal for crispiness, preserved ginger with syrup and ginger powder for chewy and aroma, dried cherry and cranberry for sweet-and-sour flavor.
You can’t stop taking these ginger cookies any more!
     
2. Salted caramel with Nuts and Chocolate

Salted caramel become to a hot product recently, so many kinds of salted caramel
be on sale. But this one is original one, that made with rich walnut, almond, cashew nut, and pistachio, and also rich chocolate.
This recipe is very easy, so it is recommendable for beginners!

3.Sprig macaron(Green tea, Cinnamon and Cassis)

Green tea is vivid green color and has bitterness of Powdered Green tea coupled with sweetness of sweet bean paste, you will feel the arrival of new Japanese macaron!

St. Valentine’s sweets!

At this month we can introduce you healthy sweets for adult, which go well wine and tea. Let’s enjoy these sweets that made without butter, and are mild sweet, as St. Valentine’s sweets!

1. Cake with chocolate chip, walnut and banana

The outside of cake is crispy, and the inside of cake contain prune which has rich brandy odors, crisp walnut, and sweet odor of cinnamon and banana and chocolate chip tempt you blissful moment.
If your sweet heart is poor in chocolate, he will be hooked on this cake!

2. Oriental Brownies

This brownies contain brown sugar and chocolate, and enjoyable oriental flavor with pumpkin seeds and wolfberry and Rhamnaceae.
Pumpkin seeds have rich Calcium, Protein, Vitamin B1, B2, Iron, and Niacin.
Wolfberry has some health benefits, which are using for fortifier, and for clear view, and for fine complexion.
And Rhamnaceae have rich Iron, Potassium, and Magnesium, and also is using for fortifier.
We recommend this oriental brownies for keeping their condition by eating healthy sweet!

Base parts of Ganache are 2kinds, one is White chocolate+ White sesame, and the other is Sweet chocolate+ Sesame paste.

At this course, you can choose 2kinds of topping among 5kinds of topping as above.

4. Adult Ganache (Cassis, Coffee)
<Coffee>
Top of Coffee Ganache contains dark rum, and decorate with sweet mimosa!
Rich coffee flavor is representative sweets of adult sweets.

Healthy X'mas Sweets!

At this month we can introduce you healthy sweets for adult, which go well wine and tea. Let’s enjoy these sweets that made without butter, and are mild sweet, as X’mas sweets!

1. Dry Fruits Pound Cake

Every year, I remember English X’mas pudding that land lady made, been on a home stay visit to U.K. for 15years ago. 
That English X’mas pudding contains many dry fruits and brandy. By imitating English X’mas pudding, we make “Japanese X’mas pudding” that use rice powder, soy milk, and many kinds of fruits and nuts!
That taste is as if custard cream, and is slightly sweet.

2. Berry-Berry Mousse

We make X’mas tree with strawberry! By using tofu, rice powder and white wine, this mousse becomes very smooth and rich taste!
On the top of mousse, we decorate strawberry, blueberry, and pretty micro-tomato!
Please enjoy this mousse as healthy X’mas dessert for adult.

3.White X’mas tree

The outside of White X’mas tree decorate with fresh cream, and the inside of it make with white bean paste and rum raison, so you can enjoy 2 different tastes for one tree!
At the base of White X’mas tree, we use tart cup which is trade edition, so this recipe fit for busy people!
You can hear merrily X’mas songs, when you decorate glitter sugar on the top of tree!

4.X’mas tart with banana and caramel

Filling with banana, caramel and walnut has bitterness and sweetness, so you can enjoy rich taste and aroma.
Decorating with fresh cream, pistachio, and powder sugar looks like a tree stump with white snow! This bittersweet X’mas tart produces you an adult X’mas party!

At this month we can introduce you healthy Japanese sweets for adult, which go well Beaujolais Nouveau wine and tea.
Let’s enjoy these sweets that made without butter, and are mild sweet, as well as colored leaves in autumn!

1. Walnut MANJU

“MANJU” is Japanese style bun stuffed with adzuki-bean paste.
This Walnut MANJU is baked with a gas oven, and stuffed with white bean paste. Crust is moist and top of walnut is crispy! So you can enjoy the different two tastes on one MANJU!
Process of rolling the dough, and wrapping with paste is suitable pleasure for autumn long night.

2. Apple tart with Domyoji powder

We made a romantic tart which arranged with slice of apple like rose petals!
Domyouji powder is one of rice powder. So tart made with Domyouji powder, almond powder, apple juice, white wine, and maple syrup, is as if rice cake!
And the top of tart, which is arranged with apple, and on that, agar syrup is poured for coating. This tart goes well white Beaujolais Nouveau wine!

3.Rum ball with sweet potato and almond

Sweet potatoes that come in autumn are getting very sweet. Mashed sweet potato and almond,raisin, prune and rum mix up with chocolate, and make it as if ball and dust it with poppy seed.
Rich flavor of rum reminds us the autumn season. This rum ball goes well red Beaujolais Nouveau wine!

4.Carrot muffin with fig, lemon peel, and white soybean paste

By adding soybean paste, sweetness of carrot and fig are emphasized.
And fresh flavor of lemon peel neutralize a heavy taste.
We use olive oil instead of butter, so this muffin is made of low calories. It will be good for break fast and refreshment also.
And this muffin goes well tea , coffee, and red Beaujolais Nouveau wine!

At this month we can introduce you healthy sweets for adult, which go well wine and tea.

1. Pumpkin muffin

For end of this month, Halloween’s pumpkin floods out on the street, so we introduce you pumpkin muffin, which is not very sweet, but with flavor of cinnamon and brown sugar bring out pumpkin’s sweetness. This muffin goes well tea and white wine.

2. Avocado and bacon muffin

Muffins are often eaten for breakfast; alternatively, and this muffin also suit for light lunch or supper with coffee or dry white wine. With black olive paste, is adding rich taste.
Avocado contains rich vitamin E, which is effective for anti-ageing, like as beauty serum of cosmetics.

3.Chocolate cake with mushrooms and prune

You may say “ It is ridiculous!!’’, that use mushrooms for chocolate cake! But it is key point that rich taste of baked mushrooms and prune. And for this rich taste, we will not need to add fresh cream, so this chocolate cake is fewer calories than traditional one. This chocolate cake goes well red wine.

4.Autumn seasonal fruit tart

In fall, we have so many seasonal fruits; apple, fig, persimmon, grape…so many!!
And at this time, we use all of autumn seasonal fruit for tart!
Nice harmony of crispy tart, moist almond cake, and fresh yoghurt cream bring out sweetness of autumn seasonal fruit. This tart goes well tea , coffee, and white wine.

On this month’s confectionary lessons, we provide you healthy sweets that are suitable for around the turn of the season, and also use seasonal sweet potato to make YOKAN and MISO CAKE! This recipe can easily cut calories off as you wish.

1. Jasmine Tea Imo-Yokan

Jasmine tea adds the oriental gorgeous flavor for simple sweet potato YOKAN!
You will also enjoy this fine flavor, and chewy taste like as rice cake.
Seasonal sweet potato has already sweetness, so you will need only small amount of sugar adding.
That means you can easily cut calories off of this YOKAN!

2. Sweet potato and Miso cake

This cake is made with MISO, for drawing out of sweetness of sweet potato. And for liaison, we use yam and FU instead of eggs. So this recipe is fewer calories than the other cakes.
It is just like early autumn that you can enjoy rich odors of preserved raisin with brandy.

3. Unbaked cheese cake with pineapple

Sweet and sour pineapple is suitable ingredients for tired body after hot summer seasons.
On this recipe, by replacing 2/3 amounts of cream cheese with cottage cheese, you can easily cut calories off almost half.
You can enjoy comparison of crunchy biscuits bottom with creamy cheese layer.
