This month, we introduce you healthy and low-calories sweets, especially using green soybeans which is summer seasonal vegetable, is of much note!

1. Bouchee with green soybeans cream

“Bouchee ”is French word, that meaning of “ a nibble” and original “Bouchee ”is a nibble of warm hors d’oeuvre.
But this Bouchee is for summer sweets, that with salty-sweet green soybeans cream and server it chilled.
This Bouchee is made of puff pastry of rice flour and low-fat fresh cream, so it is finished off fairly low-calories than trade version.
We strongly recommend that serve it with ice-cold white champagne!

2.Mousse of green soybeans

This recipe is reproduction version of Bavarian cream of green soybeans, which was favorable review last summer.
Take the chill off the milk, and add it into beated yolk with handy blender, make fluffy foam for good taste!
This mousse goes well ice-cold white champagne or stout!

3. Muffin with fig and yoghurt

By reconstitute dried fig with rum, and add yoghurt instead of butter, this muffin become having rich aroma but low-calories.
Dietary fiber of fig and lactic acid bacteria of yoghurt condition your intestines, so this muffin good for your heat exhaustion!

Every night I feel like a beer after the hot summer daytime !
At this month, we introduce the simple pasta menu for Beer-lovers!

1.Spaghetti with octopus and toasted laver, Japanese style

You can feel the smell of the sea from the sauce of toasted laver and soy sauce. And by adding spicy YUZU-KOSHO this spaghetti become going well with ice-cold beer or stout!
Cut octopus and toss with the sauce and boiling pasta, and it will be ready!
So this recipe can easily try for beginners!
     
2.Boiling eggplant tossed with Mentaiko mayonnaise

Summer is the best season for eggplant!
Peel its rind, eggplant changes its color from violet to peal green. So you can enjoy comparing the color pale green and pink of Mentaiko. Also you can feel fresh lemon aroma with mayonnaise, and green perilla smell!

Summer is coming! The temperature lasted for 30℃ or above about a week in TOKYO!
For protecting your body from heat exhaustion, you should take rich protein and Vitamins!
At this months, we introduce you plain dish which using abundant summer seasonal ingredients.

1. Italian Octopus rice

We arrange Japanese Octopus rice for local dish of South Italy, which is a stew of Octopus and Tomatoes, and serve with couscous.
Octopus contains a lot of Taurine, which is one kind of amino-acid, and has a function of anti-oxidation. Taurine also have the action of controlling blood pressure, and decline of blood sugar and cholesterol level.
Couscous bulge with hot water, so you can feel of fullness with a little amount. It is good for diet!
This Italian octopus rice goes well cilled white wine!

2. 3colors paprika salad with whitebait and sesame oil dressing

Paprika have a vivid color, so you can be a good appetite when you only see this colorful salad!
Also this recipe is very easy and quick one, so this salad is just what you needed at summer season!
Paprika rich in β-carotene, VC,VE, minerals, and dietary fibers.
Regarding VC in paprika, by heating there is almost no decreasing of it amounts.
You can enjoy that crispy whitebait and delicious sesame oils dressing also!
This salad goes well ice-cold stout!
