At this year, we have started to open BAKING CLASS, which is teaching very simple bakery’s recipe for beginners.
You will have realization of good taste of homemade bakeries!

1.Ginger cake with Okara and Brown sugar

This Ginger cake goes well with coffee or tea or Chinese tea, because of a delicate fragrance of ginger.

The medical form of ginger historically was called Jamaica ginger; it was classified as a stimulant and carminative and used frequently for dyspepsia, gastroparesis, slow motility symptoms, constipation, and colic. It was also frequently employed to disguise the taste of medicines. Ginger is on the FDA's "generally recognized as safe" list, though it does interact with some medications, including warfarin. Ginger is contraindicated in people suffering from gallstones as it promotes the production of bile. Ginger may also decrease pain from arthritis, though studies have been inconsistent, and may have blood thinning and cholesterol lowering properties that may make it useful for treating heart disease.

When fresh scents of lemon and citron are borne on soft breeze, let’s have a early spring tea party!

This month, we introduce you simple French recipes, but look like very gorgeous dishes, suitable for St. Valentine’s recipe!

1. Hachis Parmentier (Cottage Pie)

This French delicatessen is called as cottage pie in the U.K.
Cottage pie refers to a British or Irish meat pie made with beef mince and with a crust made from mashed potato. A variation on this dish using lamb mince is known as shepherd's pie.

We make this recipe, adding green peas, and change beef mince for chicken mince to reduce fat.

If you are busy, we recommend you to make this Hachis Parmentier after baking.
This recipe is very easy, so it is suitable for beginners!

2. Red pepper potage

Red peppers are available all the year around at a low price nowadays.
Compared to green peppers, red peppers have more vitamins and nutrients and contain the antioxidant lycopene. The level of carotene, another antioxidant, is nine times higher in red peppers. Red peppers have twice the vitamin C content of green peppers. Also, one large red bell pepper contains 209 mg of vitamin C, which is more than double the 98 mg in one large citrus orange.

This receipe can apply to the other vegetables potage, if you can get to learn the ropes, so let’s try it!

3.Grilled chicken with cabbage

This is the Year of the Rabbit in Chinese astrology.

And "Unohana"is 「卯の花」for Chinese characters.

U:卯→Rabbit

hana:花→Flower

So at this year's Saint Valentine's Day, we aim to be "Unohana" with OKARA SWEETS!

1. Gateau au chocolate with Okara

Okara or soy pulp is a white or yellowish pulp consisting of insoluble parts of the soybean which remain in the filter sack when pureed soybeans are filtered in the production of soy milk. It is part of the traditional cuisines of Japan, Korea, and China, and since the 20th century has also been used in the vegetarian cuisines of Western nations.

This Gateau au chocolate is without flour and chocolate, with Okara and cocoa powder, becoming moist taste.
You have better to bake this cake 1day before Saint Valentine’s Day, because this cake becoming deliciously, by putting 1day after baking.

2.Truffe of Okara

We make 3 different colors of Truffe of Okara, and these taste of 3 Truffes are as follows;
(At this course, you can choose 2kinds of tastes among 3kinds of tastes as below.)

First of all, we make paste of Okara, which is made from Okara, milk, skim milk, and cornstarch.
And adding each flavour, cinnamon for White, rum raisin for Black, and cherry+kirschwasser for Pink, and make it ball, and finally coating with each chocolate.

Hearty Okara Truffes are finished with low calorie sweets,which are 50kcal apiece and under.

So it is be a good present for your darling who is on a diet!

3.Japanese Ganache

We make 5kinds of Japanese Ganache this year, adding apricot which has received attention as healthy raw material(for recovery of fatigue ).
At this course, you can choose 2kinds of topping among 5kinds of topping as above.

4.Black sesame Ganache

We make 2 kinds of Black sesame Ganache, adding with black sesame paste for dark chocolate.

*Spinach:Spinach powder is vivid green color and has sweetness of Spinach. It is good for Vegetarian!

*White Sesame: Inside of Ganache, it contains black sesame paste, and out side of Ganache is White Sesame, so this Ganache is good for who is poor at sweets, and lovers of sesame!

4. Adult Ganache

Top of Coffee Ganache contains dark rum, and decorate with sweet mimosa!
Rich coffee flavor is representative sweets of adult sweets.

The yuzu's flavor is tart, closely resembling that of the grapefruit, with overtones of Mandarin orange. It is rarely eaten as a fruit, though in the Japanese cuisine its aromatic zest (outer rind) is used to garnish some dishes, and its juice is commonly used as a seasoning, somewhat like the way the lemon is used in other cuisines.

So this YUZU Ganache’s taste is very fresh, and goes well Japanese green tea, coffee, and well-chilled white wine!

This month, we introduce you New Year’s Dishes that use lots of seasonal vegetable and fruit for healthy New Year’s party! These Japanese style recipes go well with Japanese sake and White champagne!

1. Chicken fillets and Satsuma with Mustard dressing.

Hollowing a flesh out of Satsuma(mandarin orange) and its skin use for vessel. It is just like winter recipe and suitable for New Year’s Dishes !
Sprinkle with white wine on breast fillets, and heat up in a microwave, and break up it into pieces, then it will be ready.
Make Mustard dressing with whole-grain mustard, juice of Satsuma, and Olive oil, and toss with breast fill, and serve into skin vessel!

This easy and handsome recipe is suit for hors d’oeuvre of New Year’s Dishes! It is good for a dish eaten with sake or White wine also.

2.Namul with Japanese bunching onion and ham

Namul is a general term for a Korean seasoned vegetable dish.Fresh hot taste ob Japanese bunching onion and savory flavor of sesami oil make this Namul for having a relish!
This Namul goes well with slightly cold champagne or Japanese sake.

3.Meatloaf with many kinds of bean and pea

This meatloaf recipe contains many kinds of bean and pea, such as chick pea, green pea, Edamame, and seasons with Red Miso. So this meatloaf is very Japanese style!
Edamame helps liver function, that’s why this meatloaf is suitable for healthy New Year’s season!
This Japanese style meatloaf goes well with White wine!

4.Capelin, pickled in vinegar flavored with chili and onion.

Cut colorful vegetables, such as Red and Yellow and Green peppers and dipped with broiled capelin into vinegar flavored with chili, onion and sliced lemon. Sliced lemon flavor will remove odor left by capelin, and nice flavor of capelin penetrate into vegetables.
It goes well Sake very much! We recommend that to add this recipe for New Year’s Dishes, because New Year’s Dishes become to lack of vegetables.

5.Rolled omelet with vegetables and crabmeat.

Carrot, bean-starch vermicelli, string bean and crabmeat make Rolled omelet colorful and healthy!
Boiled ingredients, cut into fine chopping, mix well egg mixture, so it will be easy way to make soft rolled omelet.

1. Soup pasta with red king crab and broccoli

Winter is the best season for red king crab and broccoli, because those tastes are becoming sweet!
By using X’mas colors, red: red king crab, green: broccoli, white: conchiglie (seashells) and cream soup, let’s make delicious X’mas pasta for your party guest!

Red king crab contains Astaxantin, that unlike some carotenoids, is not converted to vitamin A (retinol) in the human body. Too much vitamin A is toxic for a human, but astaxanthin has lower toxicity. It is an antioxidant with a slightly lower antioxidant activity than other carotenoids.

Currently, the primary use for humans is as a food supplement. Research shows that due to astaxanthin's potent antioxidant activity, it may be beneficial in cardiovascular, immune, inflammatory and neurodegenerative diseases.
Some research has suggested potential as an anti-cancer agent.Research supports the assumption that it protects body tissues from oxidative damage.


2.Guacamole with shrimp

Guacamole is an avocado-based dip which originated in Mexico. It is traditionally made by mashing ripe avocados with a molcajete (pestle and mortar) with salt. Some recipes call for tomato, onion, garlic, lime juice or lemon juice, and/or seasonings.

We use rind of avocados for vessel, and for constrasting woth green colors of avocado, we add red pepper, red dried tomato, and for adding sweet sents, put coriander.
This objet d’art is good for hors d’oeuver of X’mas party!

High avocado intake has been shown to have a beneficial effect on blood serum cholesterol levels. Specifically, after a seven-day diet rich in avocados, hypercholesterolemia patients showed a 17% decrease in total serum cholesterol levels. These subjects also showed a 22% decrease in both LDL (harmful cholesterol) and triglyceride levels and 11% increase in HDL (helpful cholesterol) levels. Additionally a Japanese team synthesised the four chiral components and identified (2R, 4R)-16-heptadecene-1, 2, 4-triol as the natural antibacterial component.

And this recipe is fewer calories than original Lasagna recipe, because of using Tofu and White Miso paste instead of White cream.
