At this year, we have started to open BAKING CLASS, which is teaching very simple bakery’s recipe for beginners.
You will have realization of good taste of homemade bakeries!

1.Ginger cake with Okara and Brown sugar

This Ginger cake goes well with coffee or tea or Chinese tea, because of a delicate fragrance of ginger.

The medical form of ginger historically was called Jamaica ginger; it was classified as a stimulant and carminative and used frequently for dyspepsia, gastroparesis, slow motility symptoms, constipation, and colic. It was also frequently employed to disguise the taste of medicines. Ginger is on the FDA's "generally recognized as safe" list, though it does interact with some medications, including warfarin. Ginger is contraindicated in people suffering from gallstones as it promotes the production of bile. Ginger may also decrease pain from arthritis, though studies have been inconsistent, and may have blood thinning and cholesterol lowering properties that may make it useful for treating heart disease.

This is the Year of the Rabbit in Chinese astrology.

And "Unohana"is 「卯の花」for Chinese characters.

U:卯→Rabbit

hana:花→Flower

So at this year's Saint Valentine's Day, we aim to be "Unohana" with OKARA SWEETS!

1. Gateau au chocolate with Okara

Okara or soy pulp is a white or yellowish pulp consisting of insoluble parts of the soybean which remain in the filter sack when pureed soybeans are filtered in the production of soy milk. It is part of the traditional cuisines of Japan, Korea, and China, and since the 20th century has also been used in the vegetarian cuisines of Western nations.

This Gateau au chocolate is without flour and chocolate, with Okara and cocoa powder, becoming moist taste.
You have better to bake this cake 1day before Saint Valentine’s Day, because this cake becoming deliciously, by putting 1day after baking.

2.Truffe of Okara

We make 3 different colors of Truffe of Okara, and these taste of 3 Truffes are as follows;
(At this course, you can choose 2kinds of tastes among 3kinds of tastes as below.)

First of all, we make paste of Okara, which is made from Okara, milk, skim milk, and cornstarch.
And adding each flavour, cinnamon for White, rum raisin for Black, and cherry+kirschwasser for Pink, and make it ball, and finally coating with each chocolate.

Hearty Okara Truffes are finished with low calorie sweets,which are 50kcal apiece and under.

So it is be a good present for your darling who is on a diet!

3.Japanese Ganache

We make 5kinds of Japanese Ganache this year, adding apricot which has received attention as healthy raw material(for recovery of fatigue ).
At this course, you can choose 2kinds of topping among 5kinds of topping as above.

This recipe of Japanese Ganache is easy, so good for beginners!
Let’s try your favorite Japanese Ganache for this year!

4.Black sesame Ganache

We make 2 kinds of Black sesame Ganache, adding with black sesame paste for dark chocolate.

*Spinach:Spinach powder is vivid green color and has sweetness of Spinach. It is good for Vegetarian!

*White Sesame: Inside of Ganache, it contains black sesame paste, and out side of Ganache is White Sesame, so this Ganache is good for who is poor at sweets, and lovers of sesame!

4. Adult Ganache

Top of Coffee Ganache contains dark rum, and decorate with sweet mimosa!
Rich coffee flavor is representative sweets of adult sweets.

The yuzu's flavor is tart, closely resembling that of the grapefruit, with overtones of Mandarin orange. It is rarely eaten as a fruit, though in the Japanese cuisine its aromatic zest (outer rind) is used to garnish some dishes, and its juice is commonly used as a seasoning, somewhat like the way the lemon is used in other cuisines.

So this YUZU Ganache’s taste is very fresh, and goes well Japanese green tea, coffee, and well-chilled white wine!

TOKYO is still hitting the hottest summer after the Second World War!!
At this month, we introduce you Japanese style healthy sweets that remind you the cool wind in early autumn!

1.Green tea custard pudding

You can enjoy that melting taste of this green tea custard pudding in your mouth!!
Also you can heal your heat exhaustion by its bittersweet taste!
By one bite of this green tea custard pudding, you can feel a chilly wind in early autumn!

2. Cassis yokan

Yōkan is a thick jellied dessert made of red bean paste, agar, and sugar. It is usually sold in a block form, and eaten in slices. There are two main types: neri yōkan and mizu yōkan. "Mizu" means "water", and indicates that it is made with more water than usual. Mizu yōkan is often chilled and eaten in summer.

Although most yōkan found in Japan and abroad are typically made with red bean paste, yōkan made from white kidney bean paste (shiro an) are also relatively common. This type of yōkan is milky and translucent with a much milder flavour than that made of red bean paste.

This Cassis yokan is a Mizu yōkan, and made from white kidny bean paste.
Also it is flavoured as sweet-and-sour taste, and colourde as beautiful Bordeaux color, so you can invite the mistake as jewelry!
And this Cassis yokan is off its sugar amount, so it is suitable for who is dieting.

3.Tropical mousse of mango and soy milk

This mousse made of mango that produce Southern country atomospher and soy milk that Japanese ingredients.
All ingredients mix by blender, and add gelatin, and it will be ready!
This recepi suit for beginners!
You can enjoy tropical paradise by having a nibble of this mousse!

1.Tomato cheese mousse

This month, we introduce you healthy and low-calories sweets, especially using green soybeans which is summer seasonal vegetable, is of much note!

1. Bouchee with green soybeans cream

“Bouchee ”is French word, that meaning of “ a nibble” and original “Bouchee ”is a nibble of warm hors d’oeuvre.
But this Bouchee is for summer sweets, that with salty-sweet green soybeans cream and server it chilled.
This Bouchee is made of puff pastry of rice flour and low-fat fresh cream, so it is finished off fairly low-calories than trade version.
We strongly recommend that serve it with ice-cold white champagne!

2.Mousse of green soybeans

This recipe is reproduction version of Bavarian cream of green soybeans, which was favorable review last summer.
Take the chill off the milk, and add it into beated yolk with handy blender, make fluffy foam for good taste!

At this month we can introduce you homemade healthy sweets, which go well wine, tea and coffee. Let’s enjoy these sweets that are mild sweet, as White day’s & A cherry blossom-viewing picnic sweets!

1.Ginger cookies

These ginger cookies made with oatmeal for crispiness, preserved ginger with syrup and ginger powder for chewy and aroma, dried cherry and cranberry for sweet-and-sour flavor.
You can’t stop taking these ginger cookies any more!
     
2. Salted caramel with Nuts and Chocolate

Salted caramel become to a hot product recently, so many kinds of salted caramel
be on sale. But this one is original one, that made with rich walnut, almond, cashew nut, and pistachio, and also rich chocolate.
This recipe is very easy, so it is recommendable for beginners!

3.Sprig macaron(Green tea, Cinnamon and Cassis)
