Although Tokyo is a season which is surprised by heavy snow, the new year comes in the twinkling of an eye, and is it fine and are you passing it the day before yesterday?

Now -- since I introduce each time the short course recipe which suited at the season that it should help coloring your great season by C's Cooking this year also !

If this time comes every year, various Valentine sweets will begin to debut at the shop front of a department store.
Is how to pass your St Valentine's Day this year already decided on?

As for the Valentine sweets of this C's Cooking, making sweets is an easy recipe with which Ho, beginners, also tends to challenge.

1.Cheese Cake with Chocolate Chip

This Cheese cake is perfect for that person of an adult who is poor at a sweet thing!

2.Orange peel and Walnut brownie

Finally this year and plunge in December, has become a temperature throughout the winter seems to be our care??

Seems to be doing even more time to greet the New Year and East Japan after the earthquake this year, but became a really tough year, sure to bond with people than usual and important year.

It is the good news for peoples who are firmly set on making hand-made OSECHI on this year!

Let’s make your own OSECHI, not sold the Department store nor Supermarket, and easy to make this year!

Introducing dividing 12 products came courses annually in C's Cooking here five years, "seasonal recipes" this month's training, and higher popularity of your four boxes of a traditional OSECHI.

1. Petit rolled with salmon and cucumber

Sliced cucumber, with sliced salmon, colorful and good Assorted refreshments it is!!
This recipe is good for a beginner, because it will be finish quickly!


2. Mayo salmon and salmon roe radish canapes

Edamame is good for especially frequently drink alcohol at the year end ! And red bean paste adds the gentle sweetness!

7. Mandarin orange and chicken tenders with Japanese dressing

Add white wine to white meat of a chicken, and heated in the microwave and just unravel!

Bang Bang Ji, one of my favorite, so I was making every year end, to celebrate, taste better as high class Chinese restaurant outdone, can be very easy to crack!
Extra to be used, after the OSECHI –by using of ramen and the other noodles of put on eating too GOOD!

12. Italian Furofuki (Simmered)-radish

In winter season, radish has getting to increase its sweetness.
Original Japanese Furofuki-radish is simmered radish with boiled water, and served with Miso sauce. But this Italian recipe is, radish stew with dried tomatoes and garlic, and served with Miso and Olive oil sauce.
Dry tomato and garlic make good stock, and the taste of this stock brings out the sweetness of radish.
Let’s enjoy Italian and Japanese recipe at your OSECHI!

At this year, we have started to open BAKING CLASS, which is teaching very simple bakery’s recipe for beginners.
You will have realization of good taste of homemade bakeries!

1.Ginger cake with Okara and Brown sugar

This Ginger cake goes well with coffee or tea or Chinese tea, because of a delicate fragrance of ginger.

The medical form of ginger historically was called Jamaica ginger; it was classified as a stimulant and carminative and used frequently for dyspepsia, gastroparesis, slow motility symptoms, constipation, and colic. It was also frequently employed to disguise the taste of medicines. Ginger is on the FDA's "generally recognized as safe" list, though it does interact with some medications, including warfarin. Ginger is contraindicated in people suffering from gallstones as it promotes the production of bile. Ginger may also decrease pain from arthritis, though studies have been inconsistent, and may have blood thinning and cholesterol lowering properties that may make it useful for treating heart disease.

This month, we introduce you simple French recipes, but look like very gorgeous dishes, suitable for St. Valentine’s recipe!

1. Hachis Parmentier (Cottage Pie)

This French delicatessen is called as cottage pie in the U.K.
Cottage pie refers to a British or Irish meat pie made with beef mince and with a crust made from mashed potato. A variation on this dish using lamb mince is known as shepherd's pie.

We make this recipe, adding green peas, and change beef mince for chicken mince to reduce fat.

If you are busy, we recommend you to make this Hachis Parmentier after baking.
This recipe is very easy, so it is suitable for beginners!

2. Red pepper potage

Red peppers are available all the year around at a low price nowadays.
Compared to green peppers, red peppers have more vitamins and nutrients and contain the antioxidant lycopene. The level of carotene, another antioxidant, is nine times higher in red peppers. Red peppers have twice the vitamin C content of green peppers. Also, one large red bell pepper contains 209 mg of vitamin C, which is more than double the 98 mg in one large citrus orange.

This receipe can apply to the other vegetables potage, if you can get to learn the ropes, so let’s try it!

At this month, we introduce you recommend 3 recipes for Beaujolais Nouveau wine party !!

1.Spice cake

This Spice cake is very simple recipe, but its taste become high grade!
It is the spice magic!

Flavors of grated ginger and cinnamon powder become a powerful punchy taste, and goes well red Beaujolais Nouveau wine.

Also we use many of dried fruits, such as raison or Lyceum Chinese, so there are not using not so many sugar, but its taste is gentle fruity sweet.

Nutmeg is one of spice in this cake, Nutmeg and mace have similar sensory qualities, with nutmeg having a slightly sweeter and mace a more delicate flavour. Mace is often preferred in light dishes for the bright orange, saffron-like hue it imparts.

Nutmeg is used for flavouring many dishes in all countries where it is available.
In originally European cuisine, nutmeg and mace are used especially in potato dishes and in processed meat products; they are also used in soups, sauces, and baked goods. In Dutch cuisine, nutmeg is added to vegetables such as Brussels sprouts, cauliflower, and string beans. Nutmeg is a traditional ingredient in mulled cider, mulled wine, and eggnog.

Japanese varieties of curry powder include nutmeg as an ingredient.

2.Carrots pao de queijo

First of all, process bean curd less, starch, rice powder, barley miso,olive oil, and grated carrots in food processor until smooth.

This simple recipe is good for beginners, but this taste of pao de queijo fairly well than trade edition!

Carrot is typify of Green-Yellow vegetables, and contain a lot of β-Carotene.β-Carotene is the more common form and can be found in yellow, orange, and green leafy fruits and vegetables. 3.Broccoli and hum soup

A recipe for broccoli and hum soup is similar to potage, so it’s very simple.

Original recipe of this soup is adding sour cream, but on this recipe is using cottage cheese instead of sour cream, so its calories become 1/4.

Broccoli is high in vitamins C, K, and A, as well as dietary fiber; it also contains multiple nutrients with potent anti-cancer properties, such as diindolylmethane and small amounts of selenium. A single serving provides more than 30 mg of Vitamin C and a half-cup provides 52 mg of Vitamin C. The 3,3'-Diindolylmethane found in broccoli is a potent modulator of the innate immune response system with anti-viral, anti-bacterial and anti-cancer activity.

Broccoli also contains the compound glucoraphanin, which can be processed into an anti-cancer compound sulforaphane, though the benefits of broccoli are greatly reduced if the vegetable is boiled. Broccoli is also an excellent source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells. Broccoli has the highest levels of carotenoids in the brassica family. It is particularly rich in lutein and also provides beta-carotene.

Kinako is a product commonly used in Japanese cuisine.
Kinako is produced by finely grinding roasted soybeans into powder.Kinako, being composed of soybeans, is a healthy topping and flavoring which contains B vitamins and protein.

Harmonize of good smells, sweet banana’s aroma with crispy walnut’s aroma is goes well coffee or tea or green tea!

If you are on a diet, do not worry about it! This cake is fewer calories than commercial production.

2. Blueberries scones

Blueberries contain anthocyanins, other antioxidant pigments and various phytochemicals possibly having a role in reducing risks of some diseases, including inflammation and certain cancers.

Researchers have shown that blueberry anthocyanins, proanthocyanidins, resveratrol, flavonols, and tannins inhibit mechanisms of cancer cell development and inflammation in vitro. Similar to red grape, some blueberry species contain in their skins significant levels of resveratrol, a phytochemical.

3.Sweet potatoes and apple Tarte Tatin

Tarte Tatin is an upside-down apple tart in which the apples are caramelized in butter and sugar before the tart is baked.

At this month, we introduce you 2 recipes of Japanese style, and good for Halloween party’s menu!

1. Pumpkin balls of tea napkin bag style

We make pumpkin balls, inside is simmered minced chicken of seasoning with honey, ginger, and soy sauce. Tastes of these pumpkin balls are similar to pumpkin croquettes, but these pumpkin balls are not fries, so these calories are fewer.
Pumpkin ball suits with hors d’oeuvre for Halloween party, and goes well with dry white wine!
Pumpkin is rich in VE andβ-carotene, which is Anti-oxidizer, is prevention for arteriosclerosis.

At this month, we introduce you low calories and healthy recipe for healing your heat exhaustion.

1. Fresh roll (served with miso dressing)

A fresh roll is a Vietnamese dish consisting of pork, shrimp, herbs, bún (rice vermicelli), and other ingredients wrapped in rice paper.
This fresh roll is rather JAPANESE style, because we use green perilla for herbs, and bean-starch vermicelli for bún.
Also we serve with a miso dressing which is mixed with rice vinegar and white miso.

One of ingredient, shrimp is diet food, as high in protein, low-fat, and low-calories.
Also shrimp contains Taurine, which may exert a beneficial effect in preventing diabetes-associated microangiopathy and tubulointerstitial injury in diabetic nephropathy. Taurine acts as a glycation inhibitor also.

And shrimp contains calcium and potassium.


2.Gumbo soup

Gumbo is a stew or soup originating in south Louisiana which is popular across the Gulf Coast of the United States and into the U.S. South. It consists primarily of a strong stock, meat or shellfish, a thickener, and the vegetable "holy trinity" of celery, bell peppers, and onion. Traditionally, one of the key ingredients has been okra, the African plant okingumbo, from which the dish originally took its name.

Okra ( known in many English-speaking countries as lady's fingers or gumbo) is a flowering plant in the mallow family. It is valued for its edible green seed pods. Originating in Africa, the plant is cultivated in tropical, subtropical and warm temperate regions around the world. It became a popular vegetable in Japanese cuisine toward the end of the 20th century, served with soy sauce and katsuobushi, or as tempura.

One of food stuff of okura is β-carotene, which is Anti-oxidizer, is prevention for arteriosclerosis.

This Gumbo soup is good for healing your summer lethargy!

At this month, we introduce you Japanese style healthy sweets that remind you the cool wind in early autumn!

1.Green tea custard pudding

You can enjoy that melting taste of this green tea custard pudding in your mouth!!
Also you can heal your heat exhaustion by its bittersweet taste!
By one bite of this green tea custard pudding, you can feel a chilly wind in early autumn!

2. Cassis yokan

Yōkan is a thick jellied dessert made of red bean paste, agar, and sugar. It is usually sold in a block form, and eaten in slices. There are two main types: neri yōkan and mizu yōkan. "Mizu" means "water", and indicates that it is made with more water than usual. Mizu yōkan is often chilled and eaten in summer.

Although most yōkan found in Japan and abroad are typically made with red bean paste, yōkan made from white kidney bean paste (shiro an) are also relatively common. This type of yōkan is milky and translucent with a much milder flavour than that made of red bean paste.

This Cassis yokan is a Mizu yōkan, and made from white kidny bean paste.
Also it is flavoured as sweet-and-sour taste, and colourde as beautiful Bordeaux color, so you can invite the mistake as jewelry!
And this Cassis yokan is off its sugar amount, so it is suitable for who is dieting.

3.Tropical mousse of mango and soy milk

This mousse made of mango that produce Southern country atomospher and soy milk that Japanese ingredients.
All ingredients mix by blender, and add gelatin, and it will be ready!
This recepi suit for beginners!
You can enjoy tropical paradise by having a nibble of this mousse!
